GRAIN FREE GRANOLA

Most breakfast cereals are full of inflammatory wheat/gluten and sugar so this is a great swap.




Prep time: less than 30 mins Cook time: 30- 60 mins

Serves: 6

Ingredients


💫 3 cups of nuts of your choice (raw almonds, brazil nuts, walnuts, pecans and/or macadamias, roughly chopped - no peanuts as full of mould!)

💫 ½ cup sunflower seeds and pumpkin seeds

💫 ½ cup collagen (I like Do Not Age collagen peptides, click on link for 10% discount)

💫 1 cup dessicated coconut

💫 ½ cup ground flax seeds

💫 ¼ cup goji berries

💫 2-3 tablespoons coconut oil

💫 1 pinch salt

💫 1 tsp organic ceylon cinnamon

💫 1 tsp vanilla essence

💫 2 egg whites (extra protein)

💫 1-2 tbsp almond butter



Method

1. Activate the raw nuts and seeds (except chia and flax seeds) by soaking for at least two hours

2. Drain and rinse nuts and seeds, lay on a clean cloth to dry, and sprinkle with salt.

3. Preheat oven to 250°F/120C and line a baking sheet with parchment paper or even better

4. Separate egg white, or prepare flax egg (1 Tbsp ground flax + 3 Tbsp water)

5. Combine all ingredients in a bowl, mix thoroughly, and spread evenly on the sheet.

6. Bake 30-40 minutes until golden, rotating halfway through cooking time or even better use a dehydrator for 4 hours on one side and 4 hours on the other side.

7. Remove from the oven and allow to cool

8. Store the granola in an airtight container in the fridge so it stays extra crunchy.

9. When you eat, add toppings of choice eg: coconut kefir/yoghurt, almond milk and some stewed apple (full of gut loving pectin) or berries or cacao nibs.


NOTE

*You can experiement and add different nuts, 100% dark chocolate and different spices like cumin or chilli for a kick!
